1. Quinoa with vegetables

Ingredients

  • 1 cup of raw quinoa (80 g)
  • 1 onion
  • 2 carrots
  • 1 cup of mushrooms (125 g)
  • 1/2 eggplant
  • 1 clove of garlic
  • 1 cup of Swiss chard (45 g)
  • 2 cups of vegetable broth (500 ml)
  • 1 cup of grated cheese (115 g)

Preparation

  • Add the quinoa to a colander and wash it off with tap water.
  • Clean it, drain it and cook it in boiling water for 10 minutes.
  • Peel and wash the carrot, then cut it into slices.
  • Cut the eggplant and add the mushrooms with the chard, then cut the onion into small pieces.

  • Start by washing the quinoa well to release all the starch it contains.

  • Cut the onion and peppers and brown with a little oil in a pan.
