How to choose a good fish

For this preparation to be a perfect success, the most important thing is that the fish is very fresh and of good quality. If you are buying a whole fish, one way to ensure its freshness is to check its eyes.

If the color is light and bright and you can make out the iris, it is a sign that the fish is fresh. When the eyes of the fish are dark or their veins are black, it means that the fish is not that fresh.

He probably spent too much time exposed to the air in the fish market or supermarket. It will also not be fresh if you notice that the skin is shiny or the scales are peeling off and the gills are a grayish color.

For fish fillets, check that the flesh is firm to the touch and that the smell is that of the sea. If the fish has retained its skin, check that it adheres well to the flesh. This is because when the fish has not been in the water for a long time, the skin begins to peel off.
