Ingredients

  • 2 avocados cut into pieces
  • 3 garlic cloves without skin
  • 2 cups of chickpeas (400 g)
  • 1/2 cup of ground green chilli (100 g)
  • 1 tablespoon of ground cumin (15 g)
  • 3 tablespoons of lemon juice (45 ml)
  • 2 tablespoons of fresh ground coriander (30 g)
  • 1 cup of crushed nachos (100 g)
  • 1 tablespoon of ground black pepper (15 g)
  • 2 tablespoons of sunflower oil (30 ml)

Preparation

  • Start by heating the sunflower oil on a pan with the crushed garlic cloves. Sauté until the garlic cloves become soft, lightly browned and release a delicious aroma.
  • Then put the mixture you just obtained in a deep container.
  • Now add the chickpeas in the chosen container. Using a fork, start to stir everything until you get a paste.
  • To finish, add the rest of the ingredients to the mixture and continue stirring until you obtain a puree. To get vegan burgers, the mixture you just made must resemble hamburger meat. Then model the dough so as to obtain the adequate shape.
  • Once done, toast the filling for three minutes on each side.

Ingredients

  • 2 medium potatoes (preferably sweet potatoes)
  • 4 tablespoon olive oil (60 ml)
  • 2 tablespoons of kosher salt (30 g)
  • 1 tablespoon of ground black pepper (15 g)
  • 2 mushrooms
  • 1 small shallot
  • 1 cup of cooked quinoa (100 g)
  • 3 cups of breadcrumbs (450 g)
  • 1 tablespoon of lemon juice (15 ml)
  • 3 tablespoons of guacamole (90 g)
  • 2 tablespoons of tomato puree (40 g)
  • 1 tablespoon of sprouted seeds (15 g)

Preparation

  • First of all, preheat your oven to 360 degrees Celsius. Let heat while you prepare this recipe.
  • Cover the surface of the sweet potatoes perfectly with a mixture of oil, salt and pepper.
  • Then bake the potatoes in the oven.
  • Once cooked, let them cool a little, then peel them just before crushing them so as to obtain a puree.
  • Then, mix the vegetables together until you obtain a homogeneous and finely chopped mixture.
  • On a frying pan, pour a drizzle of olive oil and brown the mushrooms with the rest of the vegetables without letting them brown.
  • Make sure to season the mixture well with salt and pepper.
  • Finally, put everything in a bowl, then stir in the quinoa. Stir to obtain a homogeneous mixture.
  • Stir in the breadcrumbs, lemon juice and two cups of mashed potatoes. This mixture is the garnish of your delicious vegan burger.
